Chicken Waldorf Protein Salad

  • 2 tablespoons Greek yogurt
  • 2 tablespoons low-fat mayonnaise
  • 1 tablespoon white-wine vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 cup grilled shredded baked or grilled chicken
  • 1 celery stalk, sliced
  • 1 green apple, cut into ½-inch pieces
  • 2 tablespoons chopped walnuts
  • 2 cups spinach

 

  1. In a medium bowl, whisk together yogurt, mayo, vinegar, salt and pepper.
  2. Add chicken, celery, apple, and walnuts and toss to combine. Serve over spinach.
