Crispy Roasted Sweet Potatoes with Lime

 

  • 4 sweet potatoes (3 pounds), cut into wedges
  • 2 tablespoons olive oil
  • ½ teaspoon lime zest, plus 2 tablespoons lime juice
  • Kosher salt and black pepper
  • 3 tablespoons chopped fresh cilantro

 

  1. Heat oven to 425 degrees. Toss the sweet potatoes, oil, lime zest, and ½ teaspoon each salt and pepper on 2 rimmed baking sheets.
  2. Roast, tossing once, until golden brown, 15 to 18 minutes. Drizzle with the lime juice and sprinkle with the cilantro.sweet-potato-lime_300
