Sweet Potato Hummus

 

  • 1 pound sweet potatoes, peeled and diced
  • 1 (14 oz.) can chickpeas, drained and rinsed
  • ½ cup plain whey protein powder
  • ¼ cup tahini (sesame paste)
  • Juice of ½ lemon
  • 1 garlic clove, minced
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin powder
  • ½ teaspoon salt

 

  1. Steam or boil sweet potatoes until tender.
  2. Placed cooked sweet potatoes and remaining ingredients in a food processor or blender and blend until smooth.
