Overnight Oats with Blueberry Sauce

 

  • ½ cup rolled oats
  • 2 teaspoons chia seeds
  • 2 teaspoons cocoa powder
  • ½ cup milk
  • ½ cup plain Greek yogurt
  • 1/ cup frozen blueberries
  • 1 tablespoon pure maple syrup
  • ½ teaspoon cornstarch
  • 1 tablespoon chopped walnuts

 

  1. In a bowl or half-pint glass jar, mix oats, chai seeds, cocoa powder, and cinnamon. Stir in milk and yogurt. Cover and let soak overnight in the refrigerator.
  2. In the morning, stir together blueberries, maple syrup, and cornstarch in a microwave-safe bowl and heat on high, uncovered for 1 minute. Stir, then heat for an additional 1 minute. This is your blueberry sauce.
  3. Serve oats topped with blueberry sauce and chopped walnuts.
