Thanksgiving Leftovers – Cranberry Turkey Salad

 

What do you do with a fridge full of turkey, stuffing, sweet potatoes, cranberries and pumpkin pie? You turn them into muscle –building meals.

 

  • 10-12 ounces turkey breast, cut into 1-inch cubes
  • ¼ cup chopped red onion
  • ¼ cup chopped celery
  • ¼ cup dried-cranberries
  • 1 tablespoon extra-virgin olive oil
  • 3 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

 

Place all ingredients in a mixing bowl and combine until they are well distributed. Serve straight up, in a wrap, or on the bread of your choice.
