BLT Pasta Salad

  • 2 tablespoons red wine vinegar
  • ¼ cup minced scallions
  • ½ cup light mayonnaise
  • ½ cup low-fat Greek yogurt
  • ½ pound bow-tie pasta
  • ½ pound bacon, cooked and chopped
  • 2 cups chopped tomatoes
  • 3 cups baby arugula
  • 1 avocado, diced
  1. In a large bowl, combine first 4 ingredients and 2 tablespoons water. Season to taste with salt and pepper.
  2. When ready to serve, add remaining ingredients to dressing. Toss to coat. Season with salt and pepper.
