Baked Plantain Chips

  • 2 green plantains, peeled
  • 3 tablespoons olive oil
  • Kosher salt
  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  2. Using a mandolin or knife, cut the plantains crosswise into 1/16-inch-thick rounds. Transfer to a medium bowl and drizzle with live oil; toss to coat. Season with salt, and spread the slices in a single layer on the prepared baking sheet.
  3. Transfer plantains to the oven and bake until they are crisp and lightly browned, for 18 to 20 minutes. Sprinkle with more salt, if desired.
