Protein Bowl

Mix Together:

  • 1 cup black beans, drained or 1 cup cook lentils
  • 1 cup cooked quinoa
  • 1 cup chopped roasted broccoli
  • ½ cup roasted cherry or grape tomatoes, sliced
  • Salsa, to taste
  • Salt and pepper, to taste
  • 1 tablespoon chopped fresh parsley
  • Optional: sour cream

Roast vegetables by tossing with 3 teaspoons olive oil (divided: 2 teaspoons for broccoli and 1 teaspoon for tomatoes), salt and pepper. Preheat oven to 400 degrees. Roast chopped broccoli for 15 to 20 minutes and then add tomatoes for another 10 minutes.
