Grilled Fruit Kabob

  • 1 fresh pineapple
  • 1 pound large strawberries
  • 2 large papayas
  • 8 ounces Greek yogurt
  • 1 tablespoon fresh mint leaves
  • ½ lime
  • Olive oil
  • Skewers

Cut pineapple into chunks slightly larger that the strawberries. Peel, halve and seed papayas, then cut into chunks the same size as the pineapple. Threat the fruit onto skewers, alternating as desired. Brush with olive oil if necessary to keep from ticking to your grill – you can skip the oil depending on your grill. Pineapple and papaya benefit more from direct contact with the grill then strawberries, and they taste great when they begin to brown and char.

Crush mint and lime, and stir into Greek yogurt. Serve each skewer with two ounces of the Greek yogurt dip.
