Varying textures keeps it interesting. Try the ratio of 1/3 cubed avocado, 1/3 fruit (try mango or strawberry) and 1/3 savory ingredient like corn, beans or tomato. Then add accents like cilantro, lime jalapeno, salt and pepper.
Make Vegan Mayo:
In a blender or food processor, puree1 avocado, 1 to 2 tablespoons lemon juice, 2 teaspoons Dijon mustard, and ½ teaspoon sea salt. Steam in 1/3 cup avocado oil or extra virgin olive oil. The “mayo” will keep in the fridge for three days.
