Smashed Raw Green Bean Salad
Combine 1 pound trimmed green beans; 1 each chopped English cucumber, clove garlic, and red chili; ¼ cup lime juice; 1 tablespoon each brown sugar and Asian fish sauce; and salt and pepper in a re-sealable plastic bag.
Smash with a rolling pin; let sit until softened, 15 minutes. Cook 2 sliced shallots in ¼ cup canola oil in a small pot over medium heat, stirring often, until browned, 10 to 12 minutes; drain. Serve over the salad.
