Fennel and Farro Salad
Cook 1 ½ cups faro. Combine ¼ cup olive oil, 3 tablespoons lemon juice, 1 tablespoon Dijon mustard, 1 teaspoon cracked caraway seeds and salt and pepper.
Toss the dressing with 6 sliced radishes, 2 shaved small yellow beets, and 1 sliced small head fennel. Let sit, stirring occasionally, until slightly softened, 10 to 15 minutes. Add 3 tablespoons chopped chives and the faro. Toss to combine.
