Quinoa with Pistachios and Dried Cranberries

Ingredients:

  • 2 ½ tbsp. olive oil
  • 2 tbsp. shallot, finely diced
  • 1 cup uncooked quinoa, rinsed
  • 1 ½ cups low-sodium chicken broth
  • 4 tbsp. lemon juice
  • 4 tsp. fresh ground black pepper
  • ½ tsp. salt
  • 1/3 cup dried sweetened cranberries
  • 1/3 cup dry-roasted pistachios, chopped
  • 2 tbsp. flat-leaf parsley, chopped

Directions:

  1. Place the 2 tsp. of olive oil in a large saucepan over medium-high heat. Add diced shallot to pan and sauté for 2 minutes, or until softened. Add the quinoa and broth to the pan and bring the mixture to a boil. Cover and reduce heat. Simmer, without stirring, for 15 minutes or until liquid is absorbed.
  2. Remove from heat and fluff with a fork. Allow to cool for 10 minutes. Using a whisk, combine remaining 2 tbsp. olive oil, lemon juice, and black pepper in a large serving bowl. Add the quinoa, cranberries, and pistachios. Toss gently to combine.
